Walking into Pardon My French Bakery is SENSORY overload. First there is the SMELL of the daily fresh baked goodies. Then there is the SIGHT of a display case filled with a catalogue of scrumptious offerings. And, finally there is the ‘MMM’, the TASTE of French macarons, croissants of all kinds, cookies, cupcakes, tarts, financiers, pave sucre, pain perdu, eclairs… and the oh so worth it calories. I mean the list goes on and on and on.
The culinary mad scientist behind these perfect pastries and baked goods is LALO TEJEDA. A local who was born and raised in Lompoc by his delicatessen owning parents.
He grew up around food, watched as it was carefully and lovingly prepared and served. He also grew up with a creative / artistic bent. Those two things inspired him to Le Cordon Bleu School in Mendota Heights, Minnesota where he graduated in 2009.
He met his wife, JAMIE, a Cal Poly Graduate and SLO Native in 2011. Shortly after they met, they moved up north to Sonoma County to better their careers. JAMIE ran the events for a couple wineries in Calistoga, while LALO gained some incredible experience working in Sonoma at one of only fourteen 3 Star Michelin restaurants in the U.S.
Shortly after, they moved back to the Central Coast to be closer to family. In January of 2016 they got married, and then opened Pardon My French Bakery 5 months later.
JAMIE said that ‘people lose their mind’ (in a good way) when they come to pick up their special orders for events and celebrations. I saw it happen and once you see and sample their offerings you will understand why.
To LALO and JAMIE – “Baking is ART.” If that is true, then LALO is a Master Painter of Pastries. The ‘secret’ behind their success: They always use FRESH, high quality ingredients. They always bake fresh EVERYDAY, and LALO gets to work at 5:00AM, five days a week. In other words, great products and lots of hard work.
